How it works
Recipes from different sources assume different ovens. American cookbooks write in Fahrenheit and conventional heat; older British books use gas marks; most modern UK recipes assume fan (convection) ovens. This calculator translates cleanly between all three, giving you a temperature and baking time that match your own oven. It also nudges the numbers if you're baking at real altitude — mostly relevant if you take a recipe to the Alps or beyond.
It's for anyone who's ever set their oven to what the recipe said and pulled out a cake that was raw in the middle, or biscuits that were black on the bottom. Whether you've moved into a house with a different oven, inherited a recipe written for a different heating system, or you just want to bake at a lower temperature for a gentler result, this tool gives you a starting point that respects the maths.
How the calculation works
Every temperature is normalised through the conventional Celsius scale as a common language. If your original recipe is in fan, we add 20°C to work out the conventional equivalent; if it's in gas mark, we look up the standard British table (Gas 4 = 180°C, Gas 6 = 200°C, and so on). Then we convert from that conventional figure to whatever your oven uses.
Time adjustments follow the same principle. When you're moving between ovens at the correctly adjusted temperature, total baking time stays close to the original — the whole point of the temperature adjustment is to keep the cooking rate similar. Altitude is a modest additional factor above about 900 m, where lower air pressure means water boils cooler and batters rise faster. For high altitudes we nudge the temperature up slightly and shorten the time a touch, and flag a note about reducing raising agents and adding a little extra liquid.
A worked example
A brownie recipe from a US cookbook says "bake at 350°F for 25 minutes". You have a UK fan oven. Convert 350°F to Celsius first (about 175°C conventional), then subtract 20°C for fan — bake at 155°C fan for around 25 minutes. Start checking with a skewer at the 20-minute mark; the top should be set and slightly cracked, and a skewer should come out with damp crumbs but no wet batter.
Or: your gran's shortbread recipe says "gas mark 3 for 45 minutes". You have a conventional electric oven. Gas Mark 3 = 170°C conventional for 45 minutes. Set the dial to 170°C, place the tin on the middle shelf, and start checking the colour at 40 minutes.
Why this matters
Getting the temperature wrong by 20°C is enough to change a bake fundamentally. Too hot and cakes rise fast, dome and crack, while the outside sets before the middle can catch up. Too cool and the whole structure sets too slowly — cakes come out flat, biscuits melt into pancakes, pastry goes soggy. Because ovens vary from their dial reading and recipes vary in which oven they assume, a small conversion mistake can compound into a large baking one.
Limitations to be aware of
The conversions here are based on standardised averages. Your own oven may run hotter or cooler than the dial suggests — an inexpensive oven thermometer costs a few pounds and tells you exactly what's going on. Position also matters: middle shelf is calibrated, top runs hotter, bottom cooler. Older gas ovens and some smaller countertop ovens have more hot spots than modern built-in ovens; rotate the tray halfway through if you notice uneven browning.
Common mistakes
- Setting a fan oven to the conventional temperature — the extra 20°C is enough to burn biscuits and dry out cakes.
- Trusting the oven dial without a thermometer — domestic ovens routinely run 10–20°C away from their dial reading.
- Opening the door too early — every peek drops the internal temperature by around 25°C, and a soufflé or Yorkshire pudding won't recover.
- Not preheating fully — a bake that goes in at 150°C when the recipe expects 180°C effectively starts under-baked for the first ten minutes.
- Ignoring shelf position — the middle shelf is where recipes are calibrated. Top and bottom shelves change how the bake browns.
- Doubling the time when you halve the temperature — heat delivery isn't linear, and a much cooler oven often needs more than proportionally longer.
