How it works

Recipes from different sources assume different ovens. American cookbooks write in Fahrenheit and conventional heat; older British books use gas marks; most modern UK recipes assume fan (convection) ovens. This calculator translates cleanly between all three, giving you a temperature and baking time that match your own oven. Altitude is a modest additional factor above about 900 m, where lower air pressure means water boils cooler and batters rise faster. A brownie recipe from a US cookbook says "bake at 350°F for 25 minutes". You have a UK fan oven. Why this matters

Getting the temperature wrong by 20°C is enough to change a bake fundamentally. Too hot and cakes rise fast, dome and crack, while the outside sets before the middle can catch up. Too cool and the whole structure sets too slowly — cakes come out flat, biscuits melt into pancakes, pastry goes soggy.
